Often called "the hen of the wood," the name maitake means "dancing mushroom" in Japanese. Unlike other polypores, the maitake mushroom is edible. Many people consider them quite delicious with a strong flavor. Maitake have been used for centuries in eastern medicine. They contain polysaccharides that are immune modulators. Like other functional mushrooms such as turkey tail and reisihi, maitake mushrooms scientists are are more closely analyzing their medicinal properties.
